Spa Salad

This salad is sensational way to get a nutritious boost.

Vinaigrette
  • 2 Tbs fresh lime juice
  • 1 Tbs soy sauce
  • 1 shallot, minced
  • 1 Tbs grated fresh ginger
  • 5 Tbs extra-virgin olive oil

  • Salad
  • 1 head butter lettuce, torn into bite-sized pieces
  • Inner leaves of 1 head romaine lettuce, torn into pieces
  • 1 cup baby arugula or spinach leaves
  • 1 Belgian endive, thinly sliced
  • 4 green onions, sliced
  • 2 carrots, peeled and sliced
  • 10 radishes, thinly sliced
  • 1 avocado, peeled, pitted, and diced
  • ½ cup shelled edamame
    1. To make the vinaigrette: In a small bowl, whisk all the ingredients together.
    2. In a large bowl, whisk the soy sauce, sesame oil, lime juice, rice vinegar, olive oil, and ginger. Add the remaining ingredients and toss to combine.
    Makes 4 servings
    Soba Noodle Salad

    A classic salad with fresh vegetables and energizing soba, Japanese noodles made of buckwheat and wheat flour.


  • One 8-oz pacakage soba noodles
  • 2 Tbs soy sauce
  • 2 Tbs Asian sesame oil
  • 1 Tbs fresh lime juice
  • 2 Tbs rice vinegar
  • 2 Tbs extra virgin-virgin olive oil
  • 1 tsp grated fresh ginger
  • ¼ cup sesame seeds, toasted
  • ¼ cup chopped fresh cilantro
  • 4 green onions, sliced
  • 1 cucumber, peeled and diced
  • 6 radishes, thinly sliced
  • Chopped peanut for garnish (optional)
  • ½ cup shelled edamame

    1. In a large pot of boiling water, cook the noodles until tender, about 8 minutes; drain.
    2. In a medium bowl, whisk the soy sauce, sesame oil, lime juice, rice vinegar, olive oil, and ginger Add the remaining ingredients and toss to combine. Sprinkle with chopped peanuts, if you like.
